  1. So, the countdown has begun. In the first 5 minutes we will make yeast-free dough for pies. It cooks extremely quickly and can be completed in less than 5 minutes (just mix all the ingredients and add flour). Let's cook it. To do this, pour kefir (or yogurt) into a container, beat in an egg, add salt and sugar.
  2. Lastly, add baking soda and mix all the ingredients to form a soft dough.
  3. If necessary, add as much flour as the dough takes.
  4. You need to work with yeast-free dough immediately after kneading. Let's do so. Now the next 5 minutes - during this time we must make the pies. I have an express version of making pies. Divide the dough into 2 parts and roll each of them into a flat cake up to 1 cm thick. It’s better not to roll it thinner than 1 cm, and there’s no need to roll it thicker either. 1 cm is ideal. Spread the filling evenly on the first flatbread at the same distance from each other.
  5. We cover our workpiece with a second flatbread and use a glass to cut out small circles-pies with filling inside. The edges of these pies will stick together as you cut them out, so the entire prep process only takes a few minutes.
  6. And now the final five minutes. Place the yeast-free pies in a frying pan, adding enough vegetable oil for frying. Do not skimp on the butter and heat it well. We lower the workpieces into it. As soon as one side is browned, turn it over to the second. Did you get red from the second one? You can remove the first batch from the heat and send the second one to fry. In order to speed up the process, you can fry in two frying pans, and then you can do it not in a quarter of an hour, but even faster.

Transfer the resulting dough to a board, knead several times and roll into a ball. Wrap it in a cotton cloth (towel or clean napkin) and leave to rest for 15 - 20 minutes. After which the dough is ready for use;
  2. With sour cream. It is soft, crumbly, with a very pleasant delicate taste. Suitable for both small pies or cheesecakes and large pies;
  3. In butter. This type of unleavened dough, due to the presence of butter in the composition, forms an appetizing crispy crust during the baking process. This is the basis for baking unleavened butter buns, cookies, and muffins. In some recipes, butter can be replaced with margarine;
  4. With the addition of cottage cheese. Cottage cheese introduced into a yeast-free base changes its structure, making the product made from such dough airy, lighter and especially soft. Very good for pies, large pies and filled buns;
  5. With milk. Milk introduced into the composition partially replaces yeast, starting a light fermentation process, which makes it possible to obtain airiness and porosity of the products, which thanks to this come out tender and light.

Quick yeast-free dough for pies fried in a frying pan


Yeast-free fried pies are deservedly loved: fluffy, rosy, and, moreover, easy and simple to prepare even for those who cannot cope with the capricious yeast dough.

This kneading works great with kefir or yogurt.

Pour the yogurt into a bowl, add soda, stir thoroughly until it dissolves. Add salt and sugar, beat in the egg.

Then slowly pour in the flour, constantly stirring thoroughly to obtain a uniform, soft texture without lumps. Roll the resulting dough into a ball, which can then be cut into pieces for convenience.

Roll each piece one by one into a long rope in the shape of a sausage and cut into equal parts, which will be the basis for the pies. Roll out each piece evenly using a rolling pin into a flat cake no more than 5 mm thick.

Place any filling prepared in advance in the center of the flatbreads, connect the opposite edges of the flatbread, fasten them well, pressing both edges along the entire length.

The filling can be absolutely anything: cabbage, potato, with carrots and onions, stewed mushrooms, boiled chopped eggs with fried onions, or various mixtures of the listed products.

Sweet pies can be filled with apples, thick jam from any fruit, non-liquid jam or fresh berries with sugar and starch.

Place the finished pies on a floured board for about 20 minutes to allow them to rise.

Pour vegetable oil into a prepared deep frying pan so that it covers the bottom of the frying pan by 1 cm in height, heat it well, avoiding overheating, and place the pies with the seam up at a distance from each other so that their sides do not touch, and the oil should cover them halfway .

Fry on both sides until a nice crust appears.

Recipe for yeast-free kefir dough

Take:

  • A glass of kefir;
  • 3 cups flour;
  • A third of 1 tsp. baking soda;
  • 3 tbsp. l. vegetable oil;
  • Salt;
  • 20 g butter (for greasing the mold);
  • One egg (brush the pies).

Pour kefir into a suitable container, add soda, salt and mix. An important point is to let the mixture stand for 5-10 minutes.

Add pre-sifted flour little by little evenly, kneading. Properly prepared kefir dough turns out elastic and easily comes off your hands.

The second important point: the finished kefir dough must be left alone for 15 or 20 minutes so that it rises slightly, since kefir causes a fermentation process, making the baked goods especially soft and airy.

Roll out the dough, cut out circles, onto which you place the pre-selected and prepared filling, carefully pinching the edges of the pies. Prick the top of each pie with a fork and place on a baking sheet lined with paper or sprinkled with flour.

Coat the pies with beaten egg and place in the oven for 30-35 minutes at 180-200 degrees.

When the baked goods are browned, you need to check the readiness with a wooden toothpick, then remove the baking sheet from the oven, brush the pies with melted butter and cover with a clean cotton towel for a few minutes until the butter is absorbed.

Delicious pies made from puff pastry without yeast in the oven

They can be baked in the oven quickly and easily. These pies can be filled with salmon, egg or sweet.

Very tasty and quick pies made from this dough are filled with cherries.

Store-bought puff pastry must be defrosted before rolling out. Cherries for the filling are suitable either fresh or frozen, which in this case also need to be thawed before use.

If desired, cherries can be replaced in this recipe with other berries or fruits.

Cherry pies recipe:

  • 300 gr. cherries;
  • 500 grams of ready-made puff pastry;
  • 5 tbsp. l. Sahara;
  • 1 tbsp. l. potato, or better yet corn starch.

We take washed and dried cherries; if they have pits, they need to be removed. If the cherries are frozen, they need to be thawed, just like store-bought dough.

Cover the cherries with sugar and leave for 20 minutes to release the juice. If there is not enough juice, you can add a little water.

Add starch to the cherries and place on low heat, stirring until a thick substance similar to jelly is obtained. The finished filling should be left to cool.

Roll out the dough thinly, about 5 mm, cut into approximately equal squares, which are then mentally divided diagonally into two parts. Make a neat cut on one half of the square with a knife, and place about a tablespoon of filling on the second whole part of the square.

Lightly moisten the edges with water so that they hold better, cover the part with the filling with another, cut half of the square and pinch.

Place the pies on a baking sheet sprinkled with water, place in the oven, preheated to 200 degrees, bake for 20-25 minutes until fully cooked. Cool until warm, this will make the pies even tastier.

You can also serve exactly the same savory pies. Particularly popular is the budget-friendly, yet very tasty version of puff pastries with green onions and eggs.

Ingredients for their preparation:

  • Eggs - 5 pcs.;
  • Green onions (feather) - 300 g;
  • Yeast-free puff pastry - 500 g;
  • Yolk of one egg (for lubrication);
  • Salt;
  • Vegetable oil - 1 tbsp. l.

Boil the eggs hard, cool, peel and chop. Wash the onion, dry it and chop it into rings, mashing it with salt so that it becomes softer and releases juice. Mix the onion with the egg and pour in the vegetable oil.

Thaw the dough in advance. Roll out into a layer of medium thickness, because rolled dough that is too thin will tear, and too thick, it will not bake well.

Cut into equal squares and place a tablespoon of filling in the middle of each. Carefully pinch the edges, rolling each pie into a triangle.

Line a baking tray with baking paper, grease the paper a little with oil, lay out the pies evenly, brush with beaten yolk. Bake in a preheated oven for half an hour at 180 degrees.
