And finally, the marinade. We recommend keeping the marinated seafood in the refrigerator for three hours. The marinade can be prepared as follows: mix 2 tbsp. l. butter, 2 tbsp. l. olive oil, a handful of basil leaves, 20 ml lemon juice, chopped shallots or half a head of regular onion, 80 ml white wine, 8 g chili sauce, salt, black pepper.

Step 1: prepare the grill.

First of all, you need to prepare the grill, since the shrimp marinate quite quickly! We put several sheets of dry cardboard or newspaper on the bottom of the grill, lay the coals on top so that they do not reach the middle of the walls on 2 – 3 centimeter Then we set fire to cardboard or newspaper using matches and install a metal grate on the grill. After a few seconds, the coals will begin to burn. When they are covered with ash, you can start cooking shish kebab, and this will happen in about 20 – 30 minutes, therefore, after preparing the grill, you should immediately begin preparing the shrimp and marinade.

Step 2: prepare the shrimp.


Place fresh ones in a colander king prawns and rinse them under cold running water to remove sand and any other contaminants. We remove the shell from each shrimp one by one, along with the head and tail fin. Then we put them in a colander again, rinse them again under cold water, dry the seafood with paper kitchen towels to remove excess moisture and place it in a deep plate.

Step 3: prepare the marinade.


Now let's start preparing the marinade! First, using a kitchen knife, peel a piece of fresh ginger, cut off the rhizome of the onion, remove the stalk of the hot pepper and gut it from the seeds. Then rinse the ingredients under cold running water together with lemon and dry them with paper kitchen towels, thus getting rid of excess liquid. Then we put the lemon and ginger aside, they will be needed later, and we place the pepper and onion alternately on a cutting board, chop them into small pieces of arbitrary shape and transfer the slices to a deep bowl.
Using a fine grater, grate the lemon zest from half the citrus into the same container. We do the same with a piece of peeled ginger. Then squeeze the juice from 1 lemon into a bowl with your hands, add the required amount of salt, olive oil, sugar and ground black pepper. Mix the ingredients with a tablespoon until smooth. The marinade is ready!

Step 4: marinate the shrimp and soak the bamboo skewers.


Place the shrimp prepared for marinating in a fragrant mixture of spices, lemon juice and other ingredients. Mix them with a clean hand with the liquid mass, cover the bowl with plastic cling film and place the container in the refrigerator for 10 - 12 minutes.

Then turn the skewers over to the other side and also fry the seafood 2 more minutes. Afterwards, immediately transfer the finished kebabs to a large flat dish and serve. Do not overcook the kebabs on the grill; do not forget that during frying, seafood heats up not only on the outside, but also on the inside.
