So I began to think about how to please my dear girls. She took out an old notebook with homemade baking recipes and began leafing through it. I have several notebooks of them, some with salads, some with main courses, and of course a notebook with baking recipes occupies a special place.

Everyone in our house loves baking. I love it, be it sweet or savory. Even if you bake it every day, you won’t get tired of it. And, of course, quite a lot of recipes have accumulated.

So, I was flipping through my notebook and came across a recipe for Zebra pie. Previously, in the 80-90s, this pie was often baked, but now they have forgotten something about it. After seeing this recipe, I stopped looking for others. What for? This pie is too delicious and beautiful to look for something else. Moreover, I have never baked it for my granddaughter.

The cake turns out to be very original in design, the layers are arranged in such a way that dark stripes alternate with light ones, and this resembles the color of a zebra. Hence the name.

Based on this recipe, you can bake both a pie and a cake. The only difference is that you need to prepare cream for the cake. At the end of the recipe I’ll tell you how to prepare the cream for the Zebra cake.

Well, let's start making the Zebra pie. In the recipe I indicate two numbers. The first number is for preparing a small-volume pie in a small form. If the shape is the size of a medium frying pan or larger, then the second number is relevant.

Zebra pie - a delicious homemade recipe with sour cream

We will need:

  • butter -200 gr (300 gr)
  • egg - 3 pcs. (5 pieces)
  • granulated sugar - 1 cup (2 cups)
  • vanilla sugar - 1 sachet 8 grams
  • sour cream -1 cup (1.5 cups)
  • soda - 1 teaspoon (or baking powder for dough)
  • vinegar essence (for extinguishing soda)
  • flour - 2 cups (3 cups)
  • cocoa powder - 2 tbsp. spoons
  • salt - a pinch

Preparation:

1. Beat eggs with sugar until smooth.

2. Add softened butter. The butter must be removed from the refrigerator in advance and left at room temperature until softened. It is better not to use a microwave for these purposes.

3. Add sour cream, mix well.

4. Quench the soda with vinegar essence and add to the mixture. You can use ready-made baking powder. In this case, add half a packet of baking powder along with the flour. Add salt.

5. Gradually stir in the flour in small portions. Add vanilla sugar. Leave to infuse for 30 minutes.

6. The dough should be elastic, not liquid or thick. Approximately the consistency of thick sour cream.

7. Divide the dough into two equal parts.

8. Add a little water at room temperature to the cocoa and stir until smooth. If you do not add water, the cocoa dough will be thicker than the white dough. And it will be more difficult to apply even layers.

9. Stir cocoa mass into one of the dough parts.

10. Grease the mold with butter.

11. Place a tablespoon into each bowl of dough. Have two teaspoons ready.

12. Place a spoonful of white dough in the center of the mold. Place a dark colored spoon on top.

12. Lay out all the dough in this way. You can use a teaspoon to help scrape the dough off the large spoon.

13. Try to place the dough exactly in the middle. It is necessary to ensure that the dough does not move to the side. Here you need to be patient and take your time. Then everything will work out.

14. Preheat the oven to 180 degrees.

15. Bake for 30-35 minutes, depending on the volume of dough, until golden brown. You can check readiness with a toothpick. When you pierce the finished pie, there should be no batter left on it.

16. If the top of the pie is already baked, but the middle is not yet, cover the pie with foil, reduce the temperature to 160 degrees and bake the Zebra pie until done.


17. Take the finished pie out, let it cool and serve with hot tea.

How to decorate a pie. "Zebra" cake

  • To make the cake beautiful, you can put a design on top of it. When the dough is completely poured into the mold, you can run a toothpick or knife along the dough from the edge to the center or from the center to the edge. The cake will be divided into segments and will be beautiful in decoration.

  • In order to bake a Zebra cake, you need to take the same ingredients as for the cake, only using a larger recipe.
  • Follow the recipe and bake the crust.
  • then you need to prepare the cream. The cream for the cake can be anything - custard is also suitable, cream with butter and condensed milk would also be good. But I really like sour cream combined with chocolate glaze.

Sour cream

  • take 500 gr. thick sour cream with high fat content, cool it in the refrigerator. Thick and fatty sour cream is needed so that the cream does not drip, but sticks well to the cake
  • Take them out of the refrigerator, add 1.5 cups of granulated sugar, or even better, 1 cup of powdered sugar. Beat the mixture thoroughly with a mixer. And put it back in the refrigerator.
  • When the cake is baked and completely cooled, apply cream on top and on the sides as you wish.
  • and if you want, the cake can be cut into two parts. And also put cream between the cakes.
  • If desired, you can add chopped nuts to this cream, about 100 g.

But in addition to sour cream, we will also make chocolate glaze so that the appearance matches the name.


Chocolate glaze

  • take 3 tablespoons of sour cream, cocoa powder and sugar
  • mix everything until smooth
  • put on fire. Stirring constantly, make sure that it does not boil, but that the glaze becomes dark like chocolate.
  • add a tablespoon of butter and turn off the heat. Let it cool.
  • Apply frosting to the sour cream-covered cake in random order.
  • then take a toothpick, and as your imagination dictates, draw zebra stripes. Well, or how it turns out.

Here is our pie - the cake is ready. Very beautiful and very tasty. By the way, I’m writing now, but only one memory remains of the pie. We ate everything in 10 minutes. And most importantly, my granddaughter was happy! And she said that now this is her favorite pie!
