Today we will make delicious preparations for the winter from chokeberry. In the previous article we learned about it, it will be great if you prepare this healthy berry for the winter.

I especially recommend that people suffering from high blood pressure stock up on this healing berry.

The most useful preparation for the winter of chokeberry is drying. Dried berries retain their beneficial properties.

You can store the berries for 2 years, packed in a cardboard box or glass jar, covered with parchment paper. Store in a dry and dark place. Dried chokeberry berries are used to prepare vitamin teas, compotes, jelly, bake pies and make medicinal infusions.

The easiest way is to scatter the berries on a baking sheet in one layer and dry them in a well-ventilated area, stirring as you go. When the berries stop shrinking and become wrinkled, they can be stored.

If you cannot dry the berries in the air, dry them in the oven, placing them for a while at a temperature of no more than 60 degrees. The berries should not lose their color and smell.


Dry the berries in the oven, spread them on a baking sheet, stir, the temperature is first 40 degrees, and when they begin to wilt, increase the oven temperature to 60 degrees.

I really like drying chokeberry berries in brushes. We cut off the bunches of berries with scissors and hang them on a thread stretched in the attic, balcony or veranda. In winter, I removed the brush and ate it. Vitamins are always at hand.

Chokeberry pureed with sugar

The healthy product, without being subjected to heat treatment, preserves vitamins and beneficial compounds. It is recommended to use during cold epidemics and the onset of vitamin deficiency.

For 1 kg of berries we take 800 grams of sugar. Grind the berries through a meat grinder twice. You can grind it with a blender.

Add sugar and stir thoroughly, let stand and stir again. Try it, if the sugar has dissolved, place it in sterile jars and cover with plastic lids. Store in a cool, dark place.

Aronia jam with apples

I made jam for the first time this year, and it turned out delicious. I advise you to cook according to my recipe.

  • 3 kg of rowan berries,
  • 4.5 kg sugar,
  • 1 kg ,
  • 0.4 g walnuts (can be replaced with cinnamon, half a teaspoon),
  • 3 glasses of water,
  • 2 large lemons.


Pour boiling water over the berries, leave for 12 hours, and drain the infusion. Prepare syrup from 3 glasses of infusion and sugar. Add berries, peeled and seeded apples, lightly chopped nuts to the syrup, cook for 5 minutes from the moment of boiling.

Let cool until warm and cook for 10 minutes from the moment it boils. Add the chopped lemons and cook for another 15 minutes. Don't forget to remove the foam.

Remove the jam from the heat, let it cool slightly and pour into sterile jars, close with simple lids and put away for storage.

You can take a small amount, I just have a large harvest of berries, so I make a lot of jam.

Chokeberry raisins

  • 1.5 kg of berries,
  • 1 kg sugar,
  • 2 tbsp water,
  • 1 teaspoon of citric acid.

We make syrup from water and sugar. Dispense the berries and citric acid into boiling syrup and cook for 20 minutes. Cool and place the berries in a colander, let the syrup drain and place the berries on a baking sheet to dry on parchment paper. Stir occasionally while drying. We dry for 3-4 days. Store in a paper bag or glass jar under a gauze tie.

It will be very tasty if you sprinkle the berries with powdered sugar before putting them to dry.

The syrup left over from cooking the berries is poured into a sterile container and stored for making drinks and jelly.

You will get a very tasty drink - liqueur, if you mix syrup with good vodka 1:1. I tried it, it’s a wonderful, beautiful and tasty drink.

Universal berry for compote

Chokeberry berries give a very beautiful color to compote and can be combined with any fruits and berries. One handful per three-liter jar is enough to paint a pleasant, rich color.

For 1 three-liter jar of compote we take 0.5 kg of sugar. Pour chokeberry berries into the jar, filling it 1/3 full, add apples or any other fruit (you can use just one handful for taste).

Cook the syrup, add 0.5 sugar to 2.1 liters of water, carefully pour the boiling syrup into the contents of the jar and immediately twist it, put it under a fur coat until it cools.


Compotes are stored for a very long time, several years.

Compote is very easy to prepare with it!

Still, no matter how you preserve it, frozen berries are the healthiest berries. It retains up to 75% of all beneficial properties and compounds.

Simply freeze (spread out on a baking sheet), place in a bag and seal tightly, it's ready to freeze.

The only important nuance of this process is to divide the entire volume of fruits into small rational portions, which will subsequently be defrosted separately for preparing various dishes.

Chokeberry wine at home

Chokeberry wine is a healthy product, but diabetics are not allowed to drink it.

Ingredients:

  • chokeberry - 5 kg,
  • sugar - 1 kg,
  • raisins - 50 g (optional),
  • water - 1 l.
  1. Carefully sort the berries, removing unripe and spoiled ones. Carefully sterilize and dry the container where the wine will be prepared. The chokeberries are not washed to allow natural fermentation.
  2. Each berry is crushed with clean hands and placed in a glass, enamel or plastic wide vessel with a capacity of 10 liters. Add 0.5 kg of sugar there. A handful of unwashed raisins poured into a vessel has a positive effect on the fermentation process. The resulting mass is thoroughly mixed and placed in a room with a temperature of +18°C - +25°C for seven days. Stir the entire mass 3-4 times daily.
  3. During this period, watch for the berries to rise to the surface. Once they are collected in the top layer, you should collect them with your hands and squeeze out the juice from them. The squeezed berries are not thrown away, but all the juice (both remaining in the vessel and obtained during squeezing) is filtered through cheesecloth or a colander and poured into the vessel where it will ferment, filling less than half of it. Install a water seal on the container or put on a rubber glove with one pierced finger, place the fermentation container in a dark place at room temperature.
  4. The squeezed berries are mixed with 0.5 kg of sugar and a liter of warm water at about 30°C, stirred and left at room temperature in a dark place for five days. This mixture is stirred daily and the floating parts of the berries are drowned in it to prevent mold from appearing. After the fermentation period has expired, the mixture is filtered through a colander. The collected pulp can be thrown away, and the strained juice is poured into the fermentation vessel and the water seal is placed again.
  5. Young wine will be formed in 25–50 days, when the fermentation process ends - gas bubbles will not pass through the water seal for a day or the glove will fall and will not rise again. By this time, sediment will appear at the bottom of the vessel, and the color of the drink will become lighter. The young wine is carefully poured into another vessel through a straw, without touching the sediment. You can add sugar to the drink to taste or, for better storage, fix it with vodka or alcohol diluted to 40–45%.
  6. The wine will mature in filled to the top and tightly closed vessels for three to six months in a room with a temperature of 8–16°C. Once every month or month and a half, the wine needs to be filtered if sediment appears at the bottom. If sugar was added to the young wine to improve the taste, then the seal should be put back on the container for the first time (up to 10 days).
  7. The finished wine is stored in hermetically sealed bottles. In the refrigerator or cellar it will retain its quality for 3–5 years. Its strength is 10–12% if no vodka or alcohol has been added.

Classic chokeberry tincture

Classic chokeberry tincture will help lower blood pressure in some cases.

The most delicious tincture is obtained from large berries caught by frost, but you can also use dried chokeberry, taking it in half the amount required in the recipe. The base of the tincture can be vodka, diluted alcohol, purified moonshine, cognac.

Ingredients:

  • black rowan berries - 1 kg,
  • vodka (alcohol, cognac) – 1 l,
  • sugar - 300–500 g to taste (optional).
  1. The berries are carefully sorted, small and spoiled ones are removed, the raw materials are placed in a jar, the alcohol base is poured in, sugar is added, and stirred. The liquid should cover the chokeberry by 2–3 cm.
  2. The vessel is closed with a lid and kept in a room at room temperature.
  3. Infusion period is 2–2.5 months. Shake the jar every 4-5 days.
  4. The finished product is bottled and hermetically sealed. At room temperature, the tincture can be stored indefinitely.

Chokeberry liqueur

Chokeberry liqueur is easier to prepare and does not require alcohol

To prevent the chokeberry liqueur from becoming bitter, you should use fresh, large, healthy berries that have been caught in the frost to prepare it. Remove all small items and spoiled fruits.

Ingredients:

  • chokeberry berries - 3 kg,
  • sugar - 1 kg.
  1. Berries should not be washed. Grind them until smooth with your hands, a blender or a wooden pestle.
  2. The mixture is poured into a glass jar, sugar is added, and stirred.
  3. The vessel is covered with gauze and placed in a dark place at room temperature. Stir the mixture daily with a wooden stick.
  4. After 3-4 days, install a water seal or put on a rubber glove with a punctured finger. At the end of fermentation, after a month and a half (there will be no bubbles in the water seal or the glove will fall off), the drink is purified through a gauze-cotton filter.
  5. The liqueur is bottled, tightly corked and kept for 2–3 months in a cool room with a temperature of 10°C to 16°C. After this, it is ready for use within a year or two.

Soft drinks

This bluish-black berry is not only healthy, but also tasty. Drinks made from it have a delicious aroma, rich bright color and many useful and healing properties.

Compote for the winter

To prepare canned compote, chokeberry berries are sorted, all excess is removed, washed and dried. Sterilized jars are filled one third with berries, poured with boiling water and left to warm for three minutes. Then the water is filtered and brought to a boil again to prepare syrup at the rate of 0.5 kg of sugar per liter of water. After adding sugar, boil the solution, stirring, for 5–10 minutes, pour it over the berries and seal the jars. They are turned upside down, wrapped and left to cool completely. Store the compote in a cool place. It will be ready for use a month after preparation.

A tasty and healthy drink is prepared, as a rule, from dried fruits or leaves of chokeberry. A few tablespoons of raw material are poured into 500 ml of boiling water and left for 5-7 minutes to infuse. Very interesting and healthy drinks can be obtained by supplementing chokeberry with dried fruits and leaves of raspberries, currants, and cherries.

  • starch - 40–80 g,

  1. The preparation of jelly begins by diluting the starch with a small amount of cooled boiled water. The more starch used, the thicker the drink will be.
  2. The berries are washed and crushed into puree. Strain the chokeberry juice through a sieve and squeeze out the lemon juice.

Ingredients:

  • chokeberry - 1.2 kg,
  • granulated sugar - 800 g.
  1. Carefully sorted and thoroughly washed chokeberries are dried on a large piece of cloth or towel.
  2. First, half the berries and half the sugar are crushed in a blender to a smooth puree. A separate vessel is poured with boiling water and the resulting mass is placed into it.
  3. Then the same operation is carried out with the second part of the berries and sugar.
  4. Both parts of the resulting puree, combined together, are stirred for a while to quickly dissolve the sugar, and then left for a quarter of an hour, covered with a lid.
  5. Place this uncooked jam in small sterilized jars and close with sterile lids. Store the product at the bottom of the refrigerator.

  1. The chokeberry berries are washed, removing the stalks, then dipped in boiling water for five minutes and rinsed with cold water.
  2. Separately prepare syrup from two glasses of water and 0.5 kg of sugar. It is stirred until completely dissolved, then the berries are added.
  3. After boiling, cook over low heat for 5–7 minutes and leave to infuse for at least three hours; you can leave it overnight.
  4. Then the jam is heated again to a boil and the remaining sugar and washed, peeled and peeled apples, cut into pieces, are added to it. Lovers of cinnamon flavor add a cinnamon stick. If cinnamon is only available in powder form, it should be added at the very end of making the jam.
  5. Boil the mixture for another 15 minutes. During this time, all the fruits will be ready.
  6. Place the finished jam in clean jars and store at room temperature or in the refrigerator.

  • chokeberry - 1.5 kg,
  • sugar - 1 kg,
  • water - 200 ml,
  • powdered sugar - to taste.
  1. The berries are carefully sorted, substandard ones are removed, washed in cold running water or changed several times, and dried on a cloth.
  2. Syrup is made from water and sugar. It is heated to a boil, after the crystals are completely dissolved, the berries are poured into it. You can cook the berries immediately until tender or let the syrup boil, set it aside for a couple of hours, and then cook over low heat for about 20 minutes without covering the pan or bowl with a lid. Five minutes before the end of cooking, add citric acid.
  3. The cooked berries are carefully strained through a colander, as they are easy to damage while they are still warm. When the berries reach room temperature, they are transferred to a baking sheet covered with baking paper. Heat the oven to 50°C and place a baking sheet in it for 2 hours. After the time has passed, the oven is turned off, but the baking sheets with the berries are not removed, but the berries are allowed to cool completely again.
  4. After all the procedures, the chokeberry is generously sprinkled with powdered sugar and stored in containers that can be hermetically sealed.

This healthy and tasty berry is used to bake open, closed and grated pies, charlotte, gingerbread, pies with yeast, puff pastry or unleavened dough, muffins, muffins, sponge cakes, rolls and even make cakes. Below are recipes for some of these products.

Chokeberry pie is a bright accent on the table during breakfast or snack

Ingredients:

  • berries - about 400 g,
  • eggs - 3 pcs.,
  • kefir - 1 glass,
  • sugar - 1 glass,
  • flour - 2 cups,
  • soda - 1 teaspoon,
  • vinegar to quench soda
  • butter or margarine for greasing the baking dish,
  • semolina or flour for sprinkling the mold.
  1. The chokeberry berries are separated from the stalks, carefully sorted, washed well, and dried on a towel. Then they are mixed with a small amount of flour so that they are more evenly distributed in the dough.
  2. To prepare the dough, beat the eggs and sugar well. Continuing to beat, add kefir and slaked soda. After adding flour, knead a thin dough (the consistency of thick sour cream). Pour berries into it and mix.
  3. Choose a form in which the dough will be placed in a layer 2–3 cm thick. It is greased and sprinkled with flour or semolina. Place the dough into it and level its surface.
  4. Bake for up to half an hour in an oven preheated to 200°C until the crust is browned.

To fill the pies, you can use fresh or thawed chokeberries, adding sugar to taste. Thawed berries are less tart. Many housewives prefer to mix chokeberries, for example with currants, for filling pies, supplementing them with pieces of peeled apple. The sweet filling corresponds to a rich yeast dough, which can be prepared according to any recipe. You can use this:

Ingredients:

  • milk - 0.5 l,
  • sugar - 100 g,
  • salt - 0.5 teaspoon,
  • yeast - 1 small packet,
  • flour - 900 g,
  • butter - 100 g vegetable or 80 g melted butter,
  • eggs - 3 pcs.
  1. Milk is heated to 40°C, sugar and yeast are added, and allowed to stand warm for 20 minutes.
  2. Add a third of the flour, salt, and leave to ferment in a warm place for 40 minutes.
  3. Pour in the oil, lightly beat the eggs with a fork, sifted flour, knead well and place in a warm place for 2 hours. Afterwards they knead and again place in a warm place for an hour and a half.
  4. Place the molded pies on a baking sheet greased with vegetable oil and bake at 180°C for up to half an hour. The baking time depends on the specific oven.

  • chokeberry - one and a half glasses,
  • flour - 2 cups,
  • sugar - 1 glass,
  • baking powder - 1.5 teaspoons,
  • soda - 0.5 teaspoon,
  • apple juice - 1 glass,
  • eggs - 2 pieces,
  • butter - 2 tablespoons,
  • salt - a pinch,
  • powdered sugar for sprinkling cupcakes.
  1. In a separate bowl, mix all dry ingredients except powdered sugar.
  2. Beat apple juice, eggs and butter with a mixer into a homogeneous mass. Add the dry mixture of ingredients to it and mix. Add berries and mix again.
  3. The dough is transferred to a baking dish, previously greased and sprinkled with flour, and leveled.

Ingredients:

  • vanilla sugar - 5 g.

  2. The baking sheet is covered with parchment, greased with a thin layer of refined vegetable oil. Preheat the oven to 160–170°C. The boiled thickened puree is laid out on a baking sheet, the surface is leveled and placed in the oven, leaving its door ajar for better air circulation.
  3. Dry the marmalade until a thin crust appears on top. Then remove the pan from the oven and leave until completely cooled.
  4. The finished layer of marmalade is transferred to a cutting board, the parchment is removed and cut into portions, which are sprinkled with vanilla sugar on all sides.

  • chokeberry berries - 800 g;
  • sugar - 650 g;
  • instant gelatin - 4 tbsp. spoons;
  • drinking water - 1.2 l.
  1. The washed berries are kneaded by hand in a deep saucepan and the juice is drained.
  2. The remaining pomace is poured with boiling water, boiled for a quarter of an hour and filtered through a sieve lined with gauze.
  3. Add sugar to the broth, stir, and boil for 7 minutes after boiling.
  4. Pour about a glass of broth, dissolve gelatin in it and return to the total volume. The previously squeezed berry juice is poured into it and continue to cook for about five minutes.
  5. The finished jelly is poured into prepared jars and sealed with lids.

  • chokeberry - 10 glasses,
  • sugar - 5 glasses,
  • egg white - 2 pieces.
  1. The berries are separated from the stalks and carefully washed, placed in a saucepan and crushed with a wooden spoon.
  2. Pour sugar into the resulting mass, cover with a lid, and place in the oven preheated to 160°C.

If you were unable to stock up on fresh berries on time, this is not a problem. They can easily be replaced by dried fruits, and such a substitution will not affect the quality of the final product. So, to prepare a tincture of dried chokeberry berries with vodka, wash, dry and mince the prepared dry chokeberry fruits.
