And you should not be afraid of the presence of alcohol, it will all evaporate, leaving an excellent aroma that cannot be achieved by any combination of spices.

Many people love the combination of meat, mushrooms and cheese. Well, that's a great option. In this case, add slices of melted cheese to the mushrooms - mozzarella, for example.

Ingredients

  • pork 500 g
  • mushrooms 300 g
  • onions 3 pcs.
  • dry red wine 1 glass.
  • vegetable oil 2 tbsp. l.
  • salt, spices to taste

How to cook meat rolls with mushrooms

  1. I am preparing everything necessary. I first boil fresh mushrooms and squeeze them well from the liquid; I simply rinse the pickled ones under running water.

  2. I cut the pork into slices about a centimeter thick.

  3. I beat the meat well. You should get thin oblong pieces. I sprinkle them with salt and spices and leave them to marinate for an hour at room temperature.

  4. For the filling, I chop the mushrooms with a knife and fry them in a frying pan with vegetable oil. Then I add a quarter ring of onion. I keep it on the fire for a couple more minutes.

  5. Place a tablespoon of mushroom filling on one end of the meat and roll tightly.

  6. I wrap all the rolls this way.

  7. I put the frying pan in which the mushrooms were cooked on the fire and lay out the meat preparations.

  8. I fry on all sides until appetizing browns appear. If there are too many rolls, I do this in several steps. When the process is finished, I pour in the wine.

  9. I close the lid and simmer over low heat for 30 minutes, turning occasionally so that all sides are coated in the wine sauce, then the dish will acquire a beautiful caramel color. If there is too much sauce at the end of the time, you can open the lid and let it simmer. On the contrary, if the liquid evaporates quickly, add a little wine or water if necessary.

Serve meat rolls with mushrooms hot as a meat dish, and cold they can be cut into circles and make an excellent appetizer.

On a note: You can put almost anything into the filling of such rutetics; a piece of lard, a slice of carrot, a pickled cucumber, crab sticks, cheese, and prunes will also do.

Sandwiches, canapés, pates / Snack cakes, rolls / Meat and poultry dishes

A fresh piece of meat, thoroughly marinated and baked in the oven, in a sleeve, is in itself an excellent dish for the holiday table. But this topic is already quite boring, and we need to prepare something new. You can use our step-by-step recipe with photos and prepare meat rolls with mushrooms and cheese. Believe me, they will turn out very juicy and appetizing, and a baked piece of meat is very far from this dish. Of course, it will take longer to tinker, but such little things shouldn’t scare a good housewife.

Ingredients:

1. Pork fillet – 700 g

2. Hard cheese – 150 g

3. Onions – 2 pcs.

4. Chicken egg – 2 pcs.

5. Mushrooms (champignons, oyster mushrooms) – 500 g

6. Cream - 1 tbsp.

7. Sunflower oil – 40 g

8. Salt, pepper, other spices - to taste

9. Drinking water – 1.5 tbsp.

1. First you need to prepare the filling. Boil the eggs until tender, peel them. Peel the onion and chop it into medium cubes. If necessary, remove the top layer of mushrooms, wash in cold water and chop into medium slices or cubes. Don't worry, the mushrooms will release liquid during cooking and will shrink significantly in size. Place a frying pan with butter (butter or vegetable) on the fire and add chopped onion, simmer until golden brown. Now you can add mushrooms to the onions. Fry the vegetables until all the liquid released from the pan has evaporated. You can remove from the stove and leave to cool.

2. Pour the cooled mushrooms and onions into a clean container. Chop the boiled chicken eggs, grate the hard cheese and add these ingredients to the fried vegetables. That's it, the filling is ready, all that remains is to add salt, season with ground black pepper and, if desired, other spices. Stir.

3. Take a piece of pork fillet, remove fat if necessary, wash and dry. Cut into pieces about one centimeter thick. Wrap each piece in cling film and beat it well until it doubles in size. Salt the chops. Place about two tablespoons of filling on one side of the chop. You can use as much filling as the volume of your piece of meat allows.

4. Carefully wrap the chop into a roll. Secure with a toothpick or thread. Repeat this procedure with the remaining meat and filling.

5. Heat a frying pan with vegetable oil over medium heat. Fry the rolls on each side, but just start with the part where the seam is. You can remove the toothpicks from the fried rolls, since the meat is already well fixed during frying.

6. Take a clean baking dish and place all the meat rolls with mushrooms and cheese into it. Pour in one and a half glasses of clean, drinking water. Also pour cream, salt, season with spices and place in an oven preheated to 180 degrees. Leave the dish there for about half an hour, periodically open the cabinet door and pour the released juice and cream over the meat. Serve the meat rolls hot with any side dish, because this dish will decorate even simple buckwheat porridge. Bon appetit.

Our family loves it very much. I cook this dish quite often and constantly change something in the recipe. For example, I take different types of mushrooms, use one or another sauce, in which they are subsequently stewed in the oven.

A dish such as meat rolls with mushrooms has a large number of not only recipes, but also names. So, for example, they are also called krucheniki, fingers or “curls”. These names very accurately and vividly describe the appearance and technology of preparing the dish.

Meat rolls with mushrooms - recipe

Cut the pork tenderloin into thin slices up to 1 cm thick, 8-9 cm long and 5-6 cm wide. Place the pieces of meat on a kitchen board. Cover with film and beat them off as in. After this, they should become thinner, wider and longer.

Now you need to fry the mushrooms. To prepare meat rolls, you can use both boiled wild mushrooms and raw oyster mushrooms with champignons. In this recipe I will use boiled wild mushrooms that I have frozen since the fall. By the way, in terms of taste after freezing, they are in no way inferior to freshly boiled mushrooms. Dishes made from them turn out just as tasty and aromatic, although I think they contain somewhat less vitamins and other useful substances after freezing.

So, we cook or defrost wild mushrooms before frying. If champignons or oyster mushrooms are used to prepare meat rolls with mushrooms, be sure to rinse them with cold water and then cut them into thin slices.

Peel the onion and cut it into small cubes.

In a frying pan with a small amount of vegetable oil, fry the onions until golden brown.

Place the mushrooms.

Add salt, seasonings, bay leaf.

Frying time for champignons or oyster mushrooms will be about 5 minutes, while wild mushrooms need to be fried a little longer - about 10 minutes.

Remove the pan with mushrooms from the stove. Transfer them to a plate and let cool. Unlike any other mushrooms, when frying they release a lot of juice; when preparing the rolls, it is desirable that the mushrooms be as dry as possible, so to get rid of excess liquid, it is convenient to transfer the champignons to a plate with a slotted spoon or a special spatula with holes.

Now that the meat and mushrooms are ready, you can start preparing the rolls. To do this, place a chopped piece of pork on a plate or board.

Place mushrooms on the edge of one. Starting from this edge with the mushroom filling, wrap the strip of meat into a roll.

To prevent the meat rolls with mushrooms from unfolding during frying, secure the edges of the rolls with a toothpick. In this manner, prepare all other meatloaves with mushrooms.

Place the finished pork rolls with filling in a heated frying pan with oil, toothpick side down.

Fry them for about 2 minutes on each side, turning with a spatula. During this time, the rolls will brown, but will still remain raw inside. Transfer them from the pan to a plate. Carefully remove the toothpicks.

Prepare the gravy. To do this, pour soy sauce into a bowl.

Add sugar.

Add lemon juice.

If you don't have lemon on hand, substitute lemon concentrate or apple cider vinegar. In this case, the gravy for baking meat rolls with mushrooms will acquire the desired sourness. Add dry Provençal herbs and paprika powder.

Stir the sauce.

Place the rolls in a baking dish, seam side down.

Pour the sauce over them. Place in an oven heated to 190C. Bake meat rolls with mushrooms in the oven for 20 minutes. They can be served either cold or hot. In addition to them, you can offer bechamel sauce, cranberry sauce, mustard, Tabasco, sour cream sauce with garlic. Before finishing the article, I want to say that meat rolls are prepared with different fillings, and not just mushrooms.

Nuts, onions, carrots, bacon, ham, mushrooms, cheese, pickled cucumbers, olives, sauerkraut, lard, dried fruits - dried apricots, prunes are used as fillers. Instead of mushrooms, you can try taking one or two of the above ingredients and making rolls using this recipe. Enjoy your meal. I will be glad if you liked this recipe for rolls and find it useful.
