In the kitchen you can’t do without a measuring cup, a kitchen scale, and, for some time, a calculator. After all, if about 20 years ago only classic 9% vinegar was on sale (aka table vinegar, acetic acid, also known as E260), then today there is nothing in supermarkets - essence, wine, apple and rice vinegars... Is it possible to use all these products for home canning? Of course. But what if your recipe calls for table vinegar, but you have essence? Calculate the ratio you need. I will tell you how to calculate the amount of vinegar and essence.

Let's take the usual classic vinegar 9% as a reference unit.

Essence

Its percentage is 70% or 80%. Vinegar essence is worth buying if you prepare salads that require a large amount of acid (for example, such vigorous things as adjika), or large-volume preparations.

1 teaspoon of vinegar essence replaces 8 teaspoons of 9% vinegar.

If you get the essence, but the recipe calls for very little vinegar, the essence can be diluted with plain clean water. As a rule, instructions for such dilution are written on the label. If it is not there, let me remind you:

  • in order to get vinegar 3%, pour 22 parts of water into 1 part of the essence,
  • for 6% vinegar, take 11 parts of water,
  • for 9% - 7 parts of water.

Important! A solution of acetic acid, the percentage of which exceeds 30%, is considered dangerous to human health! Therefore, vinegar essence should be placed higher in the cabinet so that children cannot reach it - it can cause burns on the skin, especially if it comes into contact with mucous membranes (mouth, eyes).

3 or 6% vinegar

Everything is simple here, the school multiplication table will help, which, most likely, you have not yet forgotten. How to calculate the amount of vinegar for canning? For 1 spoon of 9% vinegar you need 1.5 6%, and 2 - 3%.

Wine, rice, apple, white vinegar...

As a rule, the percentage of such products is 6% (but it can also be lower - 5 or 4%). This means that the quantity of such a product is calculated by the same multiplication. And by the way, if you use this particular vinegar in canning, congratulations: you have chosen the healthiest option!

Worth special attention white vinegar(not the acetic acid discussed above, but purified sherry or wine vinegar). This is a very valuable product with a strength of 4 to 6%.

Important! If you make natural vinegar yourself, calculating the percentage of its strength is more difficult, because you will not have a store label with the percentage of the product. In any case, it will be less “sour” than store-bought, so homemade apple or wine vinegar is often added to salads, which are served immediately, rather than preserved. However, if you have several liters of homemade vinegar, you can buy an alcohol meter - it will tell you exactly whether this product can be added to jars.

Can it be used for preservation? rice vinegar? This product is most often purchased for sushi. However, in Japanese cuisine it also goes into marinades, so it’s possible! But the price of this product (if it is truly fermented naturally) is quite high. Therefore, if you want to make preparations with good vinegar, wait until the apple and grape season, and when it is over, buy wine or apple cider vinegar (in spring or summer the price is higher than in late autumn - early winter).

Happy conservation!

And don’t miss it - in it I’ll talk about preparations that can be made without vinegar at all. What to replace it with? You will soon find out!

Table vinegar is an indispensable household item that has no analogues or substitutes. Initially, this product was created as a preservative, however, modern housewives know many different ways to use it. When buying this product in a store, many people pay attention to apple cider vinegar, but not many know that it is not just a flavorful salad dressing, but also a very healthy product for the body that should be included in the diet.

Product Feature

You can find several types of apple cider vinegar in stores. They differ, as a rule, in the concentration of acetic acid in the product, so the percentage of its content is indicated on the label. So you can find 3%, 5%, 6% and 9% apple cider vinegar. The most common type can safely be called a product with a 6% acetic acid content, however, this is not an entirely correct definition. In fact, the share of acetic acid in such a product is only 5%, the remaining shares are occupied by malic, ascorbic and lactic acids.

This product contains a huge amount of vitamins, microelements and minerals. So, it contains simply a huge amount of vitamin C, quite a lot of vitamins B1, B2, B6, as well as vitamins P, E and A. Minerals such as sulfur, copper, sodium, iron, magnesium, phosphorus and calcium are also contained in the product a lot. In addition, it has a fairly high content of beneficial enzymes and amino acids.

This rich composition of apple cider vinegar is due to the method of its preparation. It is made by fermenting and fermenting apples, so the benefits and chemical composition of a huge amount of apples are preserved in a relatively small amount of vinegar.

Benefit

Many articles, scientific treatises and even books have been written about the benefits of apple cider vinegar for the body. The pioneer of this movement is considered to be the American doctor, a fan of naturopathy, D. W. Jarvis, who in his book “Honey and Other Natural Products” spoke in great detail about the benefits of apple cider vinegar and how to make it at home. Russian scientist Professor Neumyvakin is also a proponent of the use of apple cider vinegar; he has two books on the benefits of this product.

Scientists and supporters of this movement confidently say that apple cider vinegar is useful in such cases.

  • This product improves blood vessels, tones their walls, so it is useful in the fight against varicose veins. This benefit is due to the presence of a huge amount of magnesium and B vitamins. Regular use of apple cider vinegar will help completely eliminate spider veins on the legs.
  • As a gargle, it will help speed up recovery from sore throat, viral and colds, as it has a good antiseptic and calming effect.
  • Due to the high content of vitamin E, phosphorus, fluorine and calcium, it will help to significantly improve the condition of the nervous system, and will have a beneficial effect in the treatment of depression and insomnia.

  • A large amount of vitamin C will improve immunity and tone the general condition of a person, increasing efficiency.
  • The enzymes contained in this product improve the condition of the digestive system and are useful in the treatment of dysbiosis and food poisoning.
  • Lactic, ascorbic and malic acids will help get rid of cholesterol plaques, remove excess carbohydrates from the body - this promotes rejuvenation of the body and has a positive effect on the process of losing weight.
  • Regular consumption of apple cider vinegar stimulates the body to renew its blood composition, eases painful menstruation, and prevents bleeding.
  • Pectins and potassium improve heart condition, prevent blood clots, and are an excellent prevention of heart attacks.
  • Magnesium helps normalize blood pressure.

Traditional medicine also notes the beneficial properties of apple cider vinegar. However, do not forget about the dangers of such treatment; you should not drink vinegar in glasses. Any treatment should be taken in doses, approaching it with a sober mind. There are several completely safe ways to use apple cider vinegar that have been tested over the years and have positive effects.

  • As an antiseptic, it very well soothes skin irritations after mosquito bites, relieves itching and swelling.
  • A bath with a small amount of apple cider vinegar will improve the condition of your hair, make it shiny and smooth, and also tone tired skin, saturate your nails with minerals and strengthen them, and help fight fungal diseases.
  • Lotions with this product treat young papillomas.
  • Lotions with a film that forms on the surface of vinegar will help relieve joint pain and gout.
  • The healing properties of an enema with a small amount of apple cider vinegar have not been proven by medicine, however, folk practice suggests that in this way the problems of constipation can be significantly alleviated. But the concentration of vinegar in it should be minimal (no more than a teaspoon per liter of water).

Harm

Despite the enormous benefits of this product, there are a number of contraindications for its use, which should never be forgotten. People with gastrointestinal diseases should not consume apple cider vinegar. In case of irritation of the mucous membranes, which occurs with gastritis, ulcers and other inflammatory processes, acids can significantly aggravate the process. With urinary tract diseases, the acidity in the body is already high, so you should not increase it even more - this can lead to the formation of erosions in the genitourinary tract.

If stones form or salts are deposited in the kidneys, you should also not abuse this product. It can stimulate the growth and elimination of stones, which will lead to blocked ducts, pain and inflammation in the kidneys. With hepatitis, exacerbations of the disease are also possible in case of increased acidity in the body. In addition, it is worth remembering to be careful in treatment. Some sources describe treatment methods in which you need to drink up to half a glass of vinegar per day. Such treatment is unacceptable - it can lead to kidney failure, liver cirrhosis and burns of the digestive tract.

Normal methods of treatment do not exceed a tablespoon of vinegar per day, in addition, such treatment should not be long-term, its maximum period should not exceed two weeks.

Acetic acid leads to the destruction of tooth enamel, so each time after drinking vinegar you should thoroughly rinse your mouth with cold water. In addition, under no circumstances should vinegar be consumed on an empty stomach - it can damage the gastric mucosa, which will lead to gastritis. Exceeding the proportion of vinegar in an enema can lead to the destruction of microflora and dysbacteriosis, and burns of the mucous membrane.

When treated with vinegar, the feeling of hunger is dulled. People who are not overweight begin to eat less food - this can lead to exhaustion and lack of vitamins and minerals.

When choosing treatment with apple cider vinegar, it is very important to weigh the pros and cons and you should definitely consult with your physician, who can assess the general condition of the body and warn about possible contraindications.

Subtleties of use

Only natural apple cider vinegar is suitable for medical use. On store shelves you can find a flavored analogue, which will not have any beneficial properties of the natural one. The first and most important thing that should be indicated on the label is that the product is made through a natural fermentation process. In order not to make a mistake in your choice, you should pay attention to the composition of the product; it should not contain dyes or flavors. Instead of this The norm of apples per serving of the product must be indicated.

The natural product will be more intensely colored, perhaps even slightly cloudy and opaque. Really high-quality apple cider vinegar will have a sediment of apple pulp; the cost of such a product is slightly higher than the cost of a synthetic analogue. Immediately after opening the jar it should smell like sour or rotten apples. If the product has a strong vinegar aroma, it is most likely a fake. The use of apple cider vinegar for medicinal purposes should be regulated according to the intended purpose. For example, to increase immunity or maintain it in the autumn-winter period, no specific or planned use of this product is needed.

It is enough just to replace ordinary vinegar with it when preserving preparations for the winter. Apple cider vinegar will perform absolutely all the functions of the usual one, in addition, it will add new notes to the usual preparations and make them much healthier than usual.

The use of this miraculous product when losing weight should be the same as when treating dysbacteriosis, since these conditions of the body are closely interrelated. To normalize the functioning of the gastrointestinal tract, you need to take a mixture of a teaspoon of apple cider vinegar, half a glass of water and half a glass of kefir. You need to take this drug 2 times a day, 5 minutes before breakfast and dinner. If dysbiosis is in an advanced state, then you should take 1 teaspoon of vinegar diluted in a glass of warm water daily, 30 minutes before breakfast, on an empty stomach for 2 months.

The process of burning excess body weight slows down when the body is too acidic. To correct this situation, you should take 1 tablespoon of the product diluted in 1 glass of warm water. You should take this medicine in small sips, definitely in the first half of the day. During the treatment period, it is worth limiting the consumption of foods that acidify the body, such as coffee.

This natural product can be very useful in treating depression. To treat nervous disorders, you need to prepare a mixture of 100 grams of honey and 2 teaspoons of vinegar, leave it for 2-3 days. Take 1 teaspoon morning and evening. For high blood pressure, you can take a solution of 1 teaspoon of vinegar and 150 milliliters of water, 1 teaspoon each morning and evening, and also apply patches soaked in a weak vinegar solution to your feet.

Under no circumstances should you consume undiluted apple cider vinegar. The total volume of vinegar taken during the day (diluted) should not exceed 2 tablespoons. Any treatment with this product should not last more than 1 month. If necessary, you can repeat the course of treatment, but only after a break of at least 2 weeks.

When starting any treatment with this product, you must undergo a full medical examination to check for contraindications; self-medication can be dangerous.

Use in everyday life

Natural apple cider vinegar can be used not only for food, but also as a universal household assistant. This product can be useful in a variety of life situations and significantly ease the troubles of housewives. Most often, apple cider vinegar is used as a glass cleaner: just 1 tablespoon per 1 liter of water will help you easily wash your windows, make them shiny, and avoid streaks. The same mixture is perfect for rinsing crystal or porcelain, in addition, it is an excellent tool for removing detergent residue from dishes after washing them.

From time to time, persistent unpleasant odors form in the refrigerator, plastic containers, and sealed containers. Sometimes this smell simply cannot be removed by any means. In such a situation, apple cider vinegar will also come to the rescue. You need to make a weak solution of it in warm water and wipe the problem areas with a soft cloth soaked in it. Vinegar perfectly removes all unpleasant odors. This is such an effective product that it can easily cope with the problem of eliminating unpleasant odors from pet toilets.

Residue from coffee and tea leaves can remain on cups, teapots and saucers. To easily remove this brown coating, you need to slightly moisten the dishes, rub them with table salt, pour in a little vinegar and rub with a damp sponge. The plaque can be removed easily, but after such cleaning you must remember to thoroughly rinse the dishes with plenty of water so that the remaining vinegar does not corrode the surface of the dishes.

Grease stains on clothes, furniture or carpets often cause a lot of trouble and cause grief for zealous and thrifty housewives. To get rid of stains, you need to moisten the problem areas and rub them liberally with baking soda. Then pour a small amount of vinegar over the prepared areas and leave until the violent reaction stops. In the case of clothes, they must be washed immediately in the washing machine. If the stain is removed from the furniture, it must be thoroughly vacuumed immediately. In the case of carpeting, it needs to dry well so that the remaining soda is well removed from the pile, so it is better to vacuum such a stain the next day after cleaning.

The bathroom and toilet are a place with high humidity. It is in these rooms that infection with fungi and mold often occurs. To prevent their occurrence or stop the spread, it is enough to occasionally carry out preventive cleaning with a mixture of water and apple cider vinegar in equal parts 1: 1. The composition should be poured into a spray bottle and thoroughly sprayed with it on the surfaces around the washbasin, bathtub, toilet, tiles and its seams, leaving everything for 10-15 minutes. Then rinse the composition from the surface with ordinary warm water. In addition, this solution can easily whiten a toilet, washbasin and bathtub. To do this, you need to pour it over the surfaces to be cleaned and leave it overnight, rinse off the composition in the morning.

Apple cider vinegar would also be appropriate in the arsenal of artists. It is useful for cleaning brushes. To do this, you need to put the brushes in an old saucepan and add vinegar and leave for an hour. Then you need to put the saucepan on the stove and bring to a boil. After this, the brushes will become soft and smooth; it is important to rinse them under running water. The saucepan also needs to be washed immediately so that the paint from the brushes does not stick into its walls. When using this cleaning method, it is very important to be as careful as possible to avoid getting the steam in your eyes or inhaling it - this can cause burns to your mucous membranes.

Vinegar is an excellent antistatic agent. To prevent synthetic items from becoming electrified, sticking to the body and tights, and causing electric shocks, you need to add half a glass of vinegar during washing. Residues of acids that settle in the fabric fibers will become a barrier to the formation of static energy.

Gardeners use apple cider vinegar to control plant pests. If a harmful plant regularly sprouts in the area and cannot be eradicated, you need to water it generously with apple cider vinegar. The acids will enter the inner layers of the root system, be distributed over its entire area and burn the plant from the inside.

There are a lot of problems that apple cider vinegar can eliminate; it is a universal household remedy, which is also very cheap, unlike household chemicals.

Recipes

To avoid the troubles that may arise from using low-quality apple cider vinegar for medicinal purposes, it is better to make a high-quality natural product at home. There are several options for preparing this product: yeast, classic yeast-free, as well as recipes with the addition of honey. All of them are equally useful, since any of them retains the concentrated beneficial properties of a large portion of apples, however, the presence of yeast may be a contraindication to the use of such a product.

In addition, when exposed to yeast during the preparation of vinegar, it is not wine alcohol that is produced, but ethyl - it poses the greatest danger to weakened organisms and is addictive, so you should choose the most classic method of preparing apple cider vinegar. Despite the peculiarities of the recipes, the preparation of natural apple cider vinegar always consists of three stages.

  • The first stage is fermentation. At this stage, the apple must and sugar gradually produce alcohol, at the end of this process a young wine with an alcohol content of up to 10% is obtained.
  • The second stage is souring. At this stage, the wine is exposed to air, colonies of Acetobacteraceae bacteria multiply in it, and they are the ones who convert alcohol into vinegar.
  • The third stage is jigging. At this stage, the vinegar is carefully filtered from the wort and allowed to settle.

Do not be afraid of harmful microbes - they will still die during the fermentation process.

The prepared fruits need to be cut into slices, remove the stems and seeds and pass through a meat grinder. The juice and cake must be transferred to a container with an open top (saucepan or basin), covered with gauze in order to create air access, but protected from the interference of insects and other pollutants. You need to leave the mass in this state for several days. It must be stored in a warm room, it is important to stir 2 times a day, every 12 hours.

When abundant foam appears on the surface of the wort, the mass begins to hiss and acquires the smell of fermentation, the mass must be strained through cheesecloth. Dry waste will no longer be needed, and the liquid must be poured into glass bottles, filling them to 2/3 of the volume. Add 1 tablespoon of sugar to each bottle and mix.

The bottles should be covered with a lid with a water seal or a medical glove with a finger pierced with a needle - this will protect the product from exposure to air, but at the same time allow fermentation vapors to escape.

On a note

Store-bought apples are also often unsuitable for making vinegar, since their surface is most often treated with various kinds of preservatives. The most important thing about apples is to preserve the natural, live yeast that lives on the skin. During preparation Under no circumstances should you use metal containers, because the acid released will corrode it and metal particles will end up in the final product.

Sugar can be replaced with honey - this will make the product even more healthy and give its taste subtle honey-floral notes. The proportions of honey per share of fermented stock should be the same as the proportions of sugar.
