Green beans are quite low in calories and are excellent for baby and diet food. It lends itself well to freezing and pickling, so you can easily stock up for the winter. And on winter evenings, cook vegetable stews, pies, omelettes and other delicious dishes with asparagus.

How to cook green beans?

I came up with this recipe myself, when a long time ago a neighbor gave me a small bag of smooth yellow pods. At first I didn’t understand what to do or how to cook these green beans. Because There was no Internet at that time, I decided to trust my intuition and half an hour later the first sample of this dish was taken. Everyone liked the stewed green beans so much that since then, every year I grow several rows of this unpretentious crop on my plot. And I am happy to cook delicious and healthy dishes with it, one of which I will introduce you to in this article. Those who do not have the opportunity to grow their own crops can always find frozen green beans on supermarket shelves, and fresh pods can be purchased inexpensively from grandmothers at the market during the season.

So, put a pan of water on the burner, add a pinch of salt and begin preparing the pods. We wash them thoroughly, cut off the stalks and “butts”. Cut the asparagus cleaned in this way into cubes 2-2.5 cm in length.

When the water boils well, put the beans in the pan and cook until half cooked. I do not recommend overcooking the pods, because... they will then be watery and tasteless. Drain the finished beans into a colander and leave to cool.

Now let's prepare other vegetables. To fry vegetables, peel the onions and carrots. Cut the onion into cubes and grate the carrots.

Rinse the sweet pepper pods, remove the core and cut into regular strips.

Dry the washed greens and chop them with a knife.

In a frying pan with a couple of tablespoons of heated vegetable oil, fry the vegetables until slightly golden brown.

Then add boiled green beans, chopped sweet peppers and a piece of butter.

Mix everything thoroughly, season with pepper and salt to taste.

Cover with a lid and simmer over low heat for 10 minutes.

During the cooking process, if desired, you can add a couple of tablespoons of sour cream or homemade mayonnaise.

When the beans are almost cooked, break the eggs into a separate bowl and stir them well with a fork.

Pour the egg mixture into the contents of the frying pan and mix everything thoroughly with a spatula so that the eggs are evenly distributed.

A few minutes before it’s ready, add fresh herbs and bay leaves, simmer the dish for another minute and remove from heat.
