Today I will prepare a simple and very tasty snack pie from thin pita bread with two types of cheese, which go well together in this recipe. This pita meat pie with chicken and cheese should be served while it is still hot. In this case, you can feel the cheese filling, which gently stretches behind every bitten bite, and the crispy Parmesan crust. The recipe for making such a layered cheese pie is quite simple, and step-by-step photos will demonstrate all stages of preparation.

We will need:

  • 2 medium chicken eggs (C-1);
  • 200 grams of processed cheese (2 pcs);
  • 120 grams boiled chicken fillet;
  • 0.5 teaspoons of paprika + 0.5 grams of hot red pepper;
  • 1 package of thin pita bread (12 sheets);
  • 30 grams of grated parmesan.

How to cook lavash pie with chicken and cheese in the oven

We start preparing the dish by preheating the oven. While we are preparing the chicken layer pie, preheat the oven to 190°C.

Place the eggs and soft melted cheese into the blender bowl at the same time.

Mix everything until the mass becomes creamy.

Add the chicken pieces to the blender and the cheese mixture. Add paprika and dry hot pepper there. Whisk.

Grease a mold or frying pan with oil and place the first sheet of lavash on the bottom.

Place two spoons of cheese filling from a blender on it and distribute it throughout the pita bread.

Cover this layer with a second sheet of pita bread and add the cheese mixture again. We continue to assemble the pie in this manner until the pita bread and cheese mixture are gone. Lightly coat the last sheet of lavash with the cheese mixture (0.5 tbsp) and sprinkle with grated Parmesan.

1 sheet of thin pita bread (size 70x55cm)

FILLING

2 large onions (300g), 500g chicken fillet, 500g sour cream, 1 tbsp vegetable oil (17g), 1 teaspoon salt, pepper

Place the pita bread on the table and spread half of the pita bread with sour cream.




Fold in half.
Place the pita bread in the mold so that the edges hang out.




Filling
Finely chop the onion.
Pour oil into a frying pan and add onions.




Place the frying pan on high heat.
Fry with frequent stirring until browning begins.




While the onion is frying, cut the chicken fillet into small pieces.
Place the chicken in the pan with the onions.




Fry, stirring occasionally, until all the chicken pieces have turned white.




Pour sour cream into the chicken, leaving a little for greasing the pie.




Salt and pepper.
If desired, you can add grated cheese and spices to taste.
When the sour cream boils, reduce the heat to below medium and simmer the chicken for 5 minutes.
If the mixture turns out to be very liquid, add a little flour to thicken.

Place the filling in the mold on the pita bread.

Place the pie in the oven, preheated to t=180~200°C, for 25~30 minutes.
If the top of the pie begins to burn, cover the top with a sheet of foil.




Serve the pie warm or at room temperature.

Scramble the eggs with kefir.
Tear the lavash sheet in half.
Pour 2~3 tablespoons of kefir mixture onto half a sheet and spread evenly (it’s convenient to spread with a pastry brush).

Do the same with the other half of the pita bread - spread it and place it in the mold.
Pour about 1/3 cup of kefir mixture.
Mix the remaining kefir mass with grated cheese.
Place half of the cheese mass in the mold and cover the top with the hanging ends of the top sheet of lavash.

Recipe 2: Lazy cheese and lavash pie (with milk)

  • 2 packages of 200 g of thin Armenian lavash (we sell it in the form of rolls, I buy it, it’s very convenient to put this “footcloth” into a mold)
  • 300 g cheese
  • 2-3 eggs
  • 2-3 cloves of garlic
  • milk

Grate the cheese on a coarse grater, add eggs, chopped garlic (you can do it without it, but it’s more piquant), mix, gradually pour milk into the mixture to make a thick cheese “dough” (like pancakes). The filling is ready.



Place a sheet of lavash on a baking sheet, grease with filling,

again lavash filling, etc. until we have used all the pita bread and filling. The top layer should be pita bread.

Bake at 180*C for about 15 minutes (this time is enough for the cheese to melt and set, and the edges of the pie to become crispy.

  • 1 package of pita bread

Place the second pita bread in this way, grease it and repeat the filling.

The last layer is chicken, cheese and herbs.

Cover the pie with the remaining side of the pita bread, tucking it inside the edges. Lubricate with filling. Place in an oven preheated to 180 degrees.

After 10 minutes, remove the pie from the oven and spread the mozzarella pieces over the surface. Place back in the oven for another 15 minutes.
