It must be cut into even portions and transferred to a container. Don't forget that you should salt the meat and add your favorite spices. In order for the dish to come out soft, you need to beat each piece thoroughly. To do this, place the meat in cling film and beat it on both sides. This method is very convenient because it allows you to quickly and without unnecessary hassle cope with a difficult task. Fill all components with cream. Now put the baking sheet into the oven. After about forty minutes, the dish can be sprinkled with cheese. After this, it should bake for another half hour. The dish must be filled with sauce, which is prepared from a mixture of herbs, garlic and mayonnaise. Place the mold in the oven for about half an hour.   • Eggplants – 4 pieces (small),
  • Mushrooms (I have fresh champignons) – 200 g,
  • Onion – 1 onion,
  • Cheese – 200 g (any hard or Adyghe),
  • Butter for cooking eggplants with mushrooms (any butter or vegetable, I used melted butter) – 50 g,
  • Balsamic vinegar or soy sauce (optional for marinating beef) - 3 tablespoons,
  • Olive oil for marinade – 1-2 tablespoons,
  • Garlic – 1-2 cloves,
  • Salt - to taste
  • Spices (marjoram, dried basil, ground black pepper) - to taste.

How to deliciously cook baked beef medallions

Wash the beef pulp, eggplants and mushrooms.

Peel the onions and eggplants and chop into cubes.

Wash fresh mushrooms (I used champignons, but you can use any mushrooms, even frozen ones) to prepare this dish, cut them as you like.

My eggplants were young, so I didn’t soak them; in winter you can use eggplants. Place the eggplants with onions, butter and mushrooms in a deep frying pan, lightly fry, add salt and then simmer under the lid until tender.

I cooked this stew of eggplants and mushrooms in a Panasonic multicooker on the “Baking” mode for 30 minutes with the lid closed, and even took it out to a separate one.

While the mushrooms and eggplants were cooking, I cut the beef flesh into medallions (1.5 cm thick plates) and marinated them in a mixture of balsamic vinegar, olive oil, salt and garlic. If you use soy sauce as a marinade for beef, it is not necessary to salt the meat.

Place the medallions in the refrigerator for 20-30 minutes in preparation for the holiday; you can marinate the beef and prepare stewed vegetables in advance, for example, in the evening.

Preheat the oven to 180 degrees, lightly grease a deep baking tray and place the marinated beef medallions in one layer.

Place in the oven until half cooked for 25-30 minutes, I waited until a tender golden brown crust appeared.

Meanwhile, grate for the baked beef.

Remove the half-cooked beef from the oven, place eggplants with mushrooms on medallions and sprinkle with grated cheese, return to the oven.

This cooking option can also be festive. And if you cook the roast not in a common roasting pan, but in separate portioned pots, you will also ensure an original presentation of the dish.


So, we will need:

  • Beef meat – 600 – 800 grams. Approximately 100 grams of meat per serving.
  • Potatoes - respectively 6 - 8 pieces of medium or large size.
  • Bulb.
  • One medium carrot.
  • Any fresh mushrooms – 300 grams.
  • A little dried mushrooms for flavor - 15 grams is enough. If there are none, then you don’t have to use them.
  • Sour cream – 100 ml or a little more.
  • Meat broth, mushroom broth, infusion or plain water - half a liter.
  • Butter – about 50 grams.
  • Vegetable oil - how much will be used for frying.
  • Bay leaves - no more than two pieces.
  • Spices – salt, pepper.

Cooking process:

  1. If you are using dried mushrooms, start with them. Initially, they need to be soaked, preferably overnight. Before cooking, drain them and chop them finely. The infusion from these mushrooms can be used instead of broth during the cooking process.
  2. Rinse the beef tenderloin well, dry it and cut into small cubes.
  3. Also wash the onion and cut it smaller.
  4. We clean the carrots, wash them and grate them.
  5. Peel the potatoes and cut them into wedges, cubes, or whatever you like.
  6. Fresh or frozen mushrooms should be washed and boiled for no more than 20 minutes in lightly salted water. The mushroom broth can also be left for later. Cool the mushrooms slightly and cut them.
  7. We start roasting with meat. We do this using vegetable oil. Fry it until golden brown. If you get a lot of meat, then it is better to do it in several portions so that it is not so much stewed as browned.
  8. Place the cooked roasted meat in a roasting pan or place it directly into pots.
  9. Fry the potatoes in the same oil. If necessary, add a little more oil. Transfer the finished potatoes to the roasting pan with the meat.
  10. Next, fry the onion for about five minutes, and then add carrots to it. For a special taste, it is better to add a little butter. You can salt and pepper them. Fry the carrots and onions for no longer than seven minutes.
  11. We try to transfer the carrots and onions into a common pan so that there is still some oil left in the pan.
  12. We also fry the mushrooms. Transfer them to a roasting pan and add dried mushrooms there.
  13. Now put sour cream and bay leaf in the roasting pan, spices to taste. Pour in the broth or the remaining decoctions, or in extreme cases, just water. You can also add a small piece of butter. Mix all this well.
  14. Cover the roasting pan or pots very tightly. You can even cover it with foil. Place in a preheated oven (about 200 degrees) and leave for 1.5 or even 2 hours. The main thing is to make sure that all the liquid does not boil away ahead of time.

  • White wine, any – 50 ml.

  • Breadcrumbs – 2 tbsp. l.
  • One chicken egg.

How to cook baked potatoes with meat and mushrooms in the oven

You need to start working with this wonderful dish by preparing the meat. It needs to be marinated. This additional operation will make it incredibly soft, juicy and tender.

For this recipe, you can use absolutely any part of the pork carcass. For example, this could be the back of the thigh.

Pre-wash the meat, dry it and cut into medium-thick pieces. Place in a deep bowl and add all the necessary ingredients for the marinade - vinegar, soy sauce, as well as salt, pepper, Russian mustard. Ingredients:

  • A piece of pork (neck or tenderloin) – 300 g;
  • Potatoes – 5 tubers;
  • Mushrooms (champignons) – 200 g;
  • Onion – 1 pc.;
  • Carrots – 1 pc.;
  • Soy sauce – 1 tbsp. l.;
  • Vegetable oil – 1 tbsp. l.;
  • Khmeli-suneli – 3 tsp;
  • Salt, pepper - to taste.

Preparation:

  1. Wash the fatty pork pulp thoroughly and cut into pieces the size of a walnut. In other words, the housewife makes exactly the same size pieces of meat when preparing goulash.
  2. Onions and carrots need to be washed and peeled. Cut the onion into half a ring, and the carrots into cubes.
  3. Wash, peel and cut the potatoes into large cubes.
  4. Rinse the mushrooms (it is better to take champignons, but other mushrooms are also fine) to remove sand and cut into slices.
  5. We put meat, mushrooms and all vegetables into the sleeve, add a little salt, pepper, suneli hops, pour in vegetable oil along with soy sauce. We tie a plastic sleeve on both sides and thoroughly mix all the ingredients.
  6. Place the sleeve on a cold baking sheet, make a couple of cuts in the sleeve so that the bag does not explode in the oven.
  7. Place the baking sheet in a preheated oven and bake the pork with vegetables for about an hour at a temperature of 200 degrees.
  8. We carefully remove the cooked meat from the sleeve and place it in one large plate. At the table, everyone will put pork and vegetables on their plate independently.

Any meat is good not only in its pure form, but also flavored with some kind of marinade. Perhaps every good housewife has her own signature marinade recipe. Some people marinate meat in mustard, others in kefir, others prefer soy sauce, mustard, or table wine as a marinade. The simplest and most reliable type of marinade for any type of meat is onion juice. Try making baked meat with mushrooms and potatoes in the oven using onions for pickling. Ingredients:

  • Piece of meat (beef) – 300 g;
  • Mushrooms (oyster mushrooms, champignons) – 200 g;
  • Potatoes – 5 tubers;

  5. Wash the mushrooms well and cut into slices. Place them on the meat. You can also lightly fry the mushrooms in a frying pan with a drop of vegetable oil before placing them in the mold.
  6. Wash the potatoes, peel them, cut into thin slices. Place the circles on the mushrooms.
  7. Coat the potatoes with a thin layer of sour cream. Sour cream can be replaced with mayonnaise if desired.
  8. Preheat the oven to 200 degrees, put the meat and side dish in it for 1 hour.

  • Vegetable oil – 1 tbsp. l.

Preparation:

  1. We thoroughly wash the meat, then cut it into pieces the size of a walnut.
  2. We wash the mushrooms from sand and cut them into slices.
  3. Wash the potatoes, peel them, cut them into thin slices.
  4. Cut the tomato and zucchini into slices.
  5. Peel the onion and cut into rings.
  6. We collect all the ingredients in one heat-resistant form with high sides. Coat the edges of the mold with vegetable oil. Place the beef in the first layer and place the onion on top. The next layer is potatoes, and then mushrooms, pre-fried in a frying pan. Next we put the zucchini, and the top layer will be tomato slices.
  7. Prepare the sauce. Place sour cream in a deep bowl, add tomato paste, then dry herbs, salt and pepper. The sauce must be stirred thoroughly. If the sour cream was thick, then you need to dilute the sauce a little with water.
  8. Pour sour cream over all the ingredients in the mold.
  9. Place the form with meat and vegetables in an oven preheated to 200 degrees. Bake for an hour.
  10. When serving, you can decorate the dish with finely chopped fresh herbs, which are available.

Adviсe:

  • In addition to potatoes, it is good to add zucchini, eggplant, and bell pepper to the meat when baking. Tomatoes have a sour taste, so it is not recommended to place them directly on potatoes, otherwise the potatoes will be soggy. It is better to place layers of zucchini and eggplant between these vegetables. Potatoes can be placed not only raw, but also slightly cooked, then they will be less tough in the dish.
  • If the oven does not work, you can cook meat and vegetables in a slow cooker. In this case, you need to select the “Baking” mode. In this case, the cooking time may increase by 20 minutes.
  • All types of meat are perfectly baked in the oven - be it pork, beef, lamb or leaner types: chicken, turkey, rabbit. To make any meat cut into pieces better, you can slightly freeze it or not completely defrost it if you use frozen meat.
